I found the perfect simple definition (on another blog) of this amazing soup I had for lunch at To Thai For, for those of you who do not recognize it.
Tom Kha Gai is a soup made of chicken (Gai) cooked (Tom) in coconut milk which has been infused with galangal (Kha), lemongrass, and kaffir lime leaves.
This soup is a bit creamy, although not at all heavy, and it’s extremely spicy. The lemongrass and lime is a bit sour against the creamy coconut milk, and the soup is loaded with wonderful vegetables, like bamboo shoots, potatoes and carrots. Even though this soup is usually made with mushrooms, the mushroom flavor is extremely mild and I would say pretty much unnoticeable. This soup is one of my top favorite soups. When I was in Thailand my teacher’s wife made the most amazing tom kha for me, and that probably sealed the deal in terms of my love for it.
As you can see in the picture, To Thai For is oddly placed in the middle of a block full of small businesses. You would probably never notice it walking or driving by, but if you’re ever in the neighborhood (Kaimuki) you must stop in. Everything else they make is delicious too!
